Subject: Culturing yeast from Hoegaarden


I currently use a generic wort made from amber LME to do my starters.
Is that suitable to try to culture the yeast from a bottle of
Hoegaarden? Should I use a wheat malt instead, or does it make any
difference?

White Labs 400 Belgian Wit is rumored to be Hoegaarden - I don't think
you'll be disappointed. It makes a very tasty wit. Wyeast 3944 is
probably the same thing.

Hoegaarden use a lager yeast (not their primary yeast strain) in their
bottles and you might not get the results you're looking for. I would
go with a White Labs Belgian Wit yeast or similar.

For the purpose of a starter it shouldn't make any difference. Use
whatever you have available.

However, don't add the slurry of one Hoegaarden bottle to a fullsize
starter. You need to step up the starter from the slurry. Start out with
10-50 ml of wort, then move on to maybe 200 ml (7 fl oz) and finally to
a fullsize starter of 1 liter (1 quart) or more.
