Hi all,

I am going to make the following 5.5 gallon CAP recipe next week and I
have a couple of questions:

Grain/Extract/Sugar

White Labs WLP840 American Lager Yeast

1. Mashing - I have a 12 gallon cooler that I use for infusion mashes.
I can do a two-step mash, but will not really have room for a protein
rest as well. Is it necessary? Will the beer be really cloudy without
it? For that matter, do I need the two step mash or can I do a single
infusion since the corn is flaked? I was planning a beta/alpha two
step (146/158, respectively), but I wouldn't mind taking a shortcut if
possible.
2. Water - do I need to care about the pH and/or mineral composition of
my water? I know this is important when making a pils, but I have
never made this beer with 6-row before. I use bottled spring water
that has a neutral pH and is filtered via reverse osmosis. That's
about all I know about the water...

Any and all help would be greatly appreciated...

In case you are trying to brew this true to style guidelines, the
Cascades are not appropriate.

Per the guidelines:
Native American hops such as Clusters, traditional continental noble
hops, or modern noble crosses (Ultra, Liberty,Crystal) are also
appropriate. Modern American hops such as Cascade are inappropriate.

Also from Guidelines, some guidance on water:
Water with a high mineral content can lead to an inappropriate
coarseness in flavor and harshness in aftertaste.

If you're just brewing for taste, then disregard.....
