Subject: Chimay clone without Chimay culture?

Well, 2 weeks ago I made a Belgian Goldian Ale with a pack of Saison yeast I had. I decided to do a Chimay style ale next week since Belgiums were on my mind. I tried to culture with a bottle of Chimay Blue and got nothing after a week. After the first four days I tried a bottle of Chimay red. Nothing after 4 days, but I think I got a bit over zelous with the shaking and got some airlock water in the culture because the next day I had nice fermentation in the culture and it now looks wrong. Little beads of something floating at the top of the culture bottle. It smells good, but looks wrong. I'm hesitant to taste it. It doesn't look like the Belgiums I have done from smack packs. The little beads of what look like yeast weren't in my starters from the Wyeast packs. Is this normal with Chimay yeasts, or did I contaminate my culture bottle? Like I said, it smells good, it just doesn't look like the other few belgiums I've done, but those weren't Chimay cultures. The only other time I messed with Chimay yeast was about 1995 and I don't remember it too well 11 years later. Regards, Bryan

I'm having difficulty visualizing what you say looks wrong with your culture, so I can't say with any degree of certainty whether your culture is contaminated or not. I can say, however, that I've cultured yeast from Chimay Cinq Cents (aka Chimay White), and there was nothing unusual about it. Normal fermentation activity, appearance and aroma. Same thing when I cultured a sample from a bottle of Duvel. It may be okay, but if it looks wrong to you, I'd recommend playing it safe by not using it. Jerry

When I hold the bottle with the culture up to the light there are little objects about the size of sesame seeds that look to be made up of clumps of yeast floating about a quarter of an inch below the surface of the starter. If I swirl or shake the starter they come back after a short while. Like I said, it smells fine, but I've never seen these little floaters in my Chimay before so I was a bit concerned. I guess I should just taste it. Bryan
