Hi again. I'm making my first "lager" and I have some questions and concerns. I have no fridge for lagering, so I'm using the basement. The temp down there hovers between 55 and 60 F, so I won't be making a "true" lager. (Hence the "Lager-Ale" in the subject line.) I racked to secondary this morning, (just finished, in fact,) and watched as some sediment was "vaccuumed" into the 2d fermenter. Should I wait a week or two and rack to a third fermenter? Or will it make any difference at all, considering the temperature I'm working at? I will bottle in 2 or 3 weeks. After that, how long should I bottle condition at 60F?
