Subject: Bottling Sugar

I skipped bottling and went straight to kegging. Now I want to bottle from a secondary. It's 5 gallons of 5% Cream Ale. It was in a primary for 6 days and has been in a secondary for two days. This is for my friends who drink Anerican swill - so it needs to be well-carbonated. When should I add the sugar? How much "cane" sugar should I use? Should I still it gently? I am bottling into 2-liter soda bottles. Can I get away with just adding a certain amount of sugar to each bottle? Dick

Final Answer: I am going to bottle 8 liters and keg the rest. I'm going to boil 4 fl oz of water, add 4 Tbsp of sugar, and split it amongst the four 2-L bottles. Anyone see a problem with this? Dick

I'd boil enough sugar for the 8 liters, add it all at once, and then bottle into individual 2L bottles. The priming level should be more consistent that way. However, you can boil it up and then carefully measure out 1/4 of the priming solution into each bottle if you'd prefer. John.

You can, but I highly recommend doing this carefully, since it's easy to get the level of sugar to vary from one bottle to the next. IMO, the best method is to use a bottling bucket. Before you rack, boil the sugar in a small amount of water to dissolve it and then put the sugar solution into the bottom of your bucket. Then you rack the beer from the secondary to the bucket. From there you use the spigot in the bucket attached to a tube and/or bottling wand to fill your bottles. If you try and bottle directly from the secondary you are going to stir up a lot of sediment when you add the priming sugar. > How much "cane" sugar should I use? There are sites on the web that let you type in things like batch size, desired volumes of CO2, plus a few other variables and then give you an exaxt amount of priming sugar. IMO, it's probably not necessary to be that precise. 3/4 cup should be fine, but you can bump it up a little if you want it to be really fizzy. I would not go higher than 1 cup because at some point your going to be making bottle bombs. > Should I still it gently? You can, but there is a higher risk of messing something up (measuring too much or too little in some bottles, accidentally priming a bottle twice, etc). Generally, "batch priming" where you add all of the sugar at once before you bottle is considered a better method than "bottle priming". The carbonation should be a lot more consistent. John.

I use my primary bucket to bottle from since ATM it's empty between batches and an auto siphon with the bottom cap off so I get all the beer. Is this any worse than having a bucket with a spigot? Thanx in advance. Gerard

IMO, it's a matter of which one you find easier. John.
