Subject: Big beer/Little beer birthday

Saturday was my birthday, so even though I was scheduled to brew with a friend on Monday I decided to try something new with what I had on hand. Recipe was as follows. 14# 2-row 3# Munich 1# flaked barley 1# Victory 1# Special B 1# Caramunich .5# Belgian B Ran off the first 5 gallons using 1oz of Centinial as FWH, and added 2# of dark brown sugar.At 30 minutes I added 2oz of Cascades. After the boil there was 4 gallons. I pitched the final 4 gallons of 1.108 wort onto one quart of working WLP005. That is one quart of yeast, not a quart starter. I took the yeast that I had reclaimed off the bottom of a ferment, cleaned it and added one pint of 1.040 wort that I canned a while back for starters. I had activity within 20 minutes of putting it all in the fermenting freezer. While I was bringing that to a boil I ran off another 5 gallons from the mash. I added to that 1 oz of Chinook as FWH and 2oz of UK Goldings at 30 minutes. It ended at 1.045 at 80'F and went onto two packets of Muntons. It was also 4 gallons. I transfered the big beer out of the 7 gallon bucket yesterday while brewing. It had a ring around the inside where the krausen had risen 4". And the gravity was down to about 1.035. Tasting the sample made me very optimistic for how it will turn out. I have never seen anything ferment like that either. The airlock look like someone blowing bubbles in water with a straw.
