Subject: Beta-Alpha Rest Question

In a recent thread concerning decion for Oktfest, a suggestion was made by Denny to do a Beta-Alpha step mash. Could someone elaborate on just what this approach accomplishes versus a single infusion? And relatedly, since in my brewing I often find that the target temp (in the mid 150s) after an hour seems to lose down to the upper 140s, am I in effect doing the reverse of the Beta-Alpha? What is the likely effect of doing the alpha first, as opposed to after the beta? It's for guys like me with too much time on their hands and enjoy putzing around with every single variable. In theory it gives you a little bit extra control over the profile of the beer. It might increase your efficiency, it might not. Like John said a single infusion works for most beers.

I think Denny was just suggesting that if you *really* feel the need to do a multi-step decion, you might as well do beta and alpha steps instead of doing any other steps.
