My sample finally stopped fermenting. It went from a starting gravity of 1.113 down to 1.008, for a total AA of 92.2% and 14% ABV. For comparison, a sample without beano femented down to around 1.040 and 9.5% ABV or so (this was by design -- this is a wee heavy mashed high with the entire first wort carmelized). I don't know what any of this means in a practical sense, but there you have it. -- (Replies: cleanse my address of the Mark of the Beast!)
