Subject: Artifically staling hops

All, It's been a while since I've been here asking for information. Been brewing for 6+ years now. Finally got the courage to try brewing a Lambic now that I got a few relatives hooked on it at a local tasting event. I need to stale the hops used. Anyone have a method to do this quickly? I remember reading somewhere that this could be done.....just can't remember where. I'll be using pellet hops and I'd like to brew this before Christmas time so I can have it ready to drink in 2008. Any help would be greatly appreciated. Also, I planted some hops in my back yard and thought that I could use these in future Lambic brews. I would appreciate any info on staling whole hops as well. A friend who commercially brewed pseudo-lambic came to the conclusion, based on his experiences, that simply leaving (stale) hops out of the brew made for better results. -- Joel Plutchak "Things just fall apart." - Now They'll Sleep (Belly)

I think some people put them in the oven, or something similar. Searching the group archives should turn up some information, I know I've seen it discussed on here before. John.

I made a big batch of plambic quite a few months ago. I had pellet hops on hand so I ended up using those up. I laid out the hops in baking pan and baked on the warm setting in the oven, raking through the mess occasionally. The smell turns to stale cheese puffs, which gets irritating because it fills the house. The boiled wort with hop additions and all didn't seem particularly bitter. Given the smells that came out of it during fermentation, I feel like something was left in there. So I don't know if I did it enough. I was doing this on and off over 5 days, alternating between baking and keeping it outside. My hops were in the ~5-6% AA range, you could probably do better with lower AA Saaz, or Strissel Spalt (pretty damn low AA). Also whole leaf hops are supposed to work better.

Thanks for all the replies. I've since found out that the local health food store carries whole hops. So, I bought me some. Boy, do they look and smell old!!!
