Subject: Amarillo for bittering a Hefe


I'm making a hefe this week and at the last minute have decided to add
another LB of wheat DME to the recipe. I bought just enough Hallertau
Hersbrucker 3% AA for the original recipe. The only hops I have in the
freezer for backup is Amarillo 7.1 AA. Can I use a few pellets of amarillo
to up the bittering a bit to counter the extra DME or will it add flavour as
well as bittering at a 60 minute boil? Thanx in advance.

You'll mostly get just bittering from a 60 minute boil. Note that the
"character" of the bitterness you'll get will vary between different types
of hops. Ie, whether it's a "harsh" or "smooth" bitterness. That's
different than the flavor contributions you would get from hops if you
added them later in the boil.

So, adding some Amarillo probably won't give you an identical bitterness
to what you would have had it if were all Hallertau, but it should be close.
The beer should not end up tasting like Amarillo hops with regards to
the hop's normal flavor contribution though.

I agree with what John is saying, but I have noticed in the past that
bittering hops have found their way into the final character of a beer.
The only experience of this was using Centennial as a bittering hop
with Fuggles & Goldings as late additions; the Centennial was still the
dominant hop.

By all means try Amarillo, and you will probably make a good beer. I
would be wary of it though and try and go for a noble hop.

How many IBUs will you get from the amarillo?
If the IBU contribution is less than 15 or so you probably would be
hard pressed to taste much of whatever hop you used.
