Subject: Adding Sugar to Secondary


I am making 5 Gal batches and using a 6.5 Gal Secondary carboy. Would it
be a good idea to add a couple tablespoons of sugar to the secondary so
the yeast clear the O2 out of the extra head space?

It's not really necessary. Most of the time there is still a little bit
of fermentation activity occuring in the secondary. However, even if you
wait until fermentation is complete, there is still residual CO2 in the
fermented beer that will get knocked out during racking and purge the
headspace.

It won't hurt anything to do what you are asking, but there's probably no
reason that you need to do it.
