I brewed an extract kit on monday night and there is still nothing going on. When my yeast (White Labs California Ale I) arrived in the mail the cold back was hot as was the yeast. Can I still salvage this batch? Maybe add more yeast? If so what kind? This has never happened in 15 batches of fine brew so far. Thanks for your help. mathuela

That's way too long-- IME even pitching a slow yeast right from the vial or smack pack will see definition yeast activity within about 36 hours. I suspect your yeast was not viable. If you have, or have access to, a packet or two of dried yeast picth it right away. FWIW I keep a few packets of yeast (Danstar Nottingham, Safale US-56) to use for just such occasions, as well as for the occasional impromptu brew session. I recommend the practice. -- Joel Plutchak "Sometimes I think we're alone in the universe, and plutchak@[...] sometimes I think we're not. In either case the idea is quite staggering." - Arthur C. Even dry yeast, if that is all you have. John.

It is usually pretty good stuff not a fussy yeast at all. Maybe you got a bad batch of it... still wouldn't surprise me if it started growing soon, but 3 days is a lot. Try shaking the crap out of the carboy... I did this a few days ago for a sleepy Kolsch and it almost instantly roused the yeast up.

I am going to use one more vial of yeast, aerate it, and hope for the best. I'll keep you posted. Thanks for the quick replies. mathuela
