1) I use Quaternary Ammonium compounds (Quats) to sanitise my dishes etc - have a three well sink. I used that chemical for my first batch with no problems. Just doing a paranoid check here that I can continue to use that method to sanitise in the future. 2) Read the points about cooling Wort. This relates to a food storage problem - reducing the temperature of foods prior to storage. In the food industry one method apart from ice baths (snow et al a "reproduction" of that) is to stir the hot food with an ice Paddle ... Looks like a soda pop bottle with wings on. You fill it with water & freeze it then stir the hot liquid gradually with it. - Some enterprising home brewer may want to try that with a litre bottle (after sanitising it of course). The real thing is under $20 at a restaurant supply store.
