Subject: 1 gal starters and mag stirrers

Hello All I've been making starters in a 1000 mL flask for a while but I'd like to bump that up to a gallon. I'm also considering a magnetic stirrer. Do folks actually buy a stirrer large enough to handle a 1 gallon jug? I dunno if I'm willing to spring for such an expensive device. I'm thinking of getting the smaller stirrer from northern brewer and using it for my 1 L starter flask, and then just stepping that up to a 1 gallon jug and letting it sit. Sound ok? Also, if I'm making a starter for a hefe-weizen which will primary at 60 and secondary in the mid 50s (F) I should build the starter at 60F, yes? Sound ok? I've got a 2L flask that I use on my stirrer. Remember that the stirrer will increase the cell count. A 2L flask on a stirrer is probably at least equivalent to a 1 gallon starter without a stirrer. You are interested in promoting population growth in the starter, target your temps for that. It does not matter what temp the beer is going to be fermented at. IMO, room temp (70F or higher) for the starter is good, even if you were using a lager yeast. I wouldn't put your starter in a fermentation fridge or anything like that. John.

How long do you usually "build" a 2L starter prior to pitching? I just make the wort in the 2L flask and dump the contents of a WhiteLabs tube straight into it. I've never had any problems doing it that way. Theoretically, the "ideal" way would be to step it up, but I don't know how much difference it really makes. John.

No -- build your starter warm or room temp -- the goal is to create yeast mass.You don't care about flavor. I disagree with his advice on the temperature (see my other post). With regards to the wort makeup, I believe he was talking about using a malt based starter solution as opposed to just refined sugar. IE, "similar wort makeup" means that you want to use DME/LME or an all grain wort, it doesn't mean that you need to use the same recipe or OG... etc. Just a basic wort with light extract should be fine. I doubt you really gain much of an advantage from either -- things will just go slower. Also, I'd not go higher than 1.040 for starter wort.
