Subject: Wyeast Belgian Ardennes
I am trying to brew a version of Dogfish's Raison Detre, but the
Wyeast smack pack didn't swell. Would it be crazy to use a pack of
Wyeast 3333 (German Wit) that I have left in the fridge? No idea how
that will affect the flavor.
Or, has anyone been able to find any homebrew ingredients in NYC?

A day or two? The first time I used it it took like 3 hours. I
smacked it 24 hours ago, am sure it popped, and shook it well. "Mfr
Aug 10". No swelling whatsoever. Haven't ever made a starter, though I
know everyone says it's good, just don't have any time or equipment
for it.

You ndd to give more info. How old is the pack, and how long ago did
you smack it? And are you sure the bubble ruptured? Sometimes it
takes several days to swell, but usually it's evident within a day or
two. You should make a starter, tho.
