Subject: RCB: Using "Alternative" Fermenting Vessels
I made the switch this year from extract to all grain. The results
are amazing. I'm making so much beer these days, that I bought chest
freezers (one for fermenting, one for serving kegs, and one for
lagering) and I'm out of carboys to ferment in. I've bought some
kegs to ferment in (brew 12 gallons, place in 3 kegs, fermet, have 2
FULL kegs when done). Now I'm thinking of fermenting in buckets.

Curious what the consensus is on buckets. I hear they can let oxygen
in. I don't know, never done it. Curious what y'all think.

PS - Can anyone recommend any good LIVER research companies to invest
in?

Buckets are fine. If you looks up some notes from Chris White from White
Labs, you'll see he even recommends open fermentation in buckets. I have
never had a batch get infected in an open bucket fermenter. The infection
I have right now was done completely with closed fermenters (!). Handling
and all, I suppose. The yeast will create a layer of CO2 that will block
most oxygen, and what is left is oxygen the yeast will take for themselves.

Don't leave the fermented beer in buckets for an excess of time, but they
are especially good for primary fermentation. Food grade plastic will not
leech air nor will food grade plastic taint the beer in any way by itself.

It's generally recommended that you don't wash them with anything abrasive
because they will scratch; nasties love to live in those scratches.
However, you can let the bucket soak in bleech for a day or two and that
will snuff out anything.

People have explained how oxygen passes through the plastic over time.
I have yet to understand that, believing in the path of least
resistance, and all that.

To be on the safe side, I don't leave anything in plastic over two
weeks. I have three plastic buckets and about fifteen carboys (of
different sizes).

I ferment almost exclusively in buckets with the exception of very
long secondary fermentations which I will put in glass. Never had a
problem.
