Subject: Partial Mash / Beersmith Question

I'm using all my leftovers before my next buying spree. The recipe I created is thus: 5# Light DME 6# Extra-light LME 1# US 2-row 1oz Northern Brewer Pellets (8%) (60m) 1oz US Saaz (3.7%) (20m) 1oz Czech Saaz (3.8%) (10m) S-04 Dry English Ale Yeast I told BeerSmith I'm going to do a partial mash. The software said I should mash with 1.39 qts of water, and then sparge with 6.43 gallons, leaving me with a boil volume of 6.41 gallons. I have 2 questions: #1 My understanding is that sparging with that much water will draw out excess tanins? Should I not worry about the tannins because of all the extracts? #2 Starting w/ .35 gallons (1.39 quarts) and adding 6.43 gallons ends up with 6.41 gallon? Can 1 lb of 2 row really hold .37 gallons? Can 1 lb of 2 row really hold .37 gallons? > > Tom When I do partials I usually sparge with the same quantity that I mash with. If 4 lbs of grain then about 1.5 gals for mash and 1.5 for sparge. I then add water to my desired boil volume. If you followed the BS instructions I would think you are correct in worrying about tannins. My guess is the program calculator that came up with 6.41 gallons was only trying to reach the desired boil amount (sparge = full boil minus mash volume) without consideration for the partial mash. Id ignore it and go with what you know. Mark R

Why partial mash just one pound of base grain? If you were adding other stuff like crystals or non-diastatic adjuncts I could understand but 1 pound of base malt mashed in with all the DME is just making hard work for little or no gain IMHO.
