I apologize if this has been asked before......I did a quick Google
search and didn;t find anything.

How much grain will a converted keg hold as a mash tun at, say, 1.25
quarts per pound?

It depends somewhat on your lautering rig, e.g., a
Bazooka or EZMasher type setup will allow significantly
more grain (at least 10 pounds) than will a high false
bottom.
That said, I don't know for sure, but I've seen a
converted keg used to mash almost an entire bag of Maris
Otter malt, which would be roughly 50 pounds. I don't
recall how thick the mash was.
Hmmmm... I'll be brewing tomorrow, so if I remember,
I'l see how much water a half-gallon of grain will take,
and extrapolate from there. (I've previously measured
roughly 4.8 pounds per gallon of dry grain.)

Perhaps 35 pounds of grain. Give or take a pound or two.

I've put 30 pounds of grain plus the water into my keg to mash with no
problems. I agree, a few more pounds would be possible.
