Subject: Freezing beer-a good thing?

Strange thing happened....I made a pale ale, kegged it, it was delicious.....but cloudy, as usual. I turned the temp down on the kegerator a bit and accidentally froze up the whole darn thing. Well, no need to panic (as I've done that before)....I turned the temp back up and it thawed by the next evening. The interesting thing is that a couple of pints later, the beer was beautifully clear!! Probably the clearest beer I've ever made....commercial-type clear! Also, the taste mellowed nicely after the freeze. I'm actually considering purposely freezing my keg as part of my routine (well, maybe). Is this coincidence or did the freezing cause all of these beneficial events to happen? Pete

Being under pressure and containing alcohol the keg probably didn't freeze that bad. Maybe a little bit of beer slushy? I wouldn't freeze your brew but as the others said, lowering to 35 or so will really clear up most brews. Mark R

This is one reason why traditional lagers are usually clearer than traditional ales. Freezing isn't standard practice, that I know of. cheers, Scott S -- Scott Sellers
