Four gallons of apple juice, brewing it's way to apple cider since Friday
afternoon. Smells, looks and sounds nice. So far, so good.

Five 12 oz cans of TreeTop frozen apple juice concentrate and five lbs
granulated sugar.

When I make cider, it is a many month thing. But then, I'm lazy. I still have 3
carboys from last fall. I'll need to keg them soon to make room for this years
apples.

I'd never really thought about it before but does cider work in corny kegs
with out any special adjustments? Would I serve it at 10-12psi like I do my
ales? How does it hold it's carbonation?

I've found no difference from beer. You can certainly vary to taste.

This is my first venture, Bob. Without the encouragement and assistance
from my Mentor in Georgia, I don't know that I would have tried it. I made
some wonderful Muscatel from the Golden Muscats in my backyard (now gone)
back in '73.

I've only made one batch of cider that went wrong, and that one was wonderful
when mixed with another complementary batch.

You'll love it. Cider is so easy.

Just checked on it. Five days now. Islands of bubbles on top and I see
bubbles all the way down the side. Smells, looks and sounds great. I hope I
can bottle it before my wife gets home (9/19), as she's gonna wanna use the
bathtub! ;-)

LOL! Now there's a problem. Just check the S.G. before you bottle. Cider goes to
1.000, or even a little lower.

My turn to laugh! The only hydrometer I have is one for measuring battery
acidity. I don't think I'll use it! ;-D

I'll let it keep going 'til I don't see any more bubbles. Maybe I'll hafta
move it?

At least make sure it tastes "dry" before you bottle then.
